Oliva's olive oil originates from two Greek brothers, who are 4th generation olive oil producers. They have carried on their family tradition, by upholding the values passed down by their father mastering the techniques required to produce one of the most acclaimed olive oils in the world.

 

The oil is harvested early, starting in October and handpicked when the young green unripe fruit is ready. It is then placed it in bins rather than bags to protect its quality, and they extract the oil at a low temperature (often called “cold pressing”) less than 4 hours after picking. Careful harvest and transportation, immediately followed by  prompt oil production which make the oil greener and higher in antioxidants, maximizing the high polyphenol content—so that it offers more health benefits and flavor. Because of this level of care, Oliva is able to maintain our high quality standard of a single sourced, single varietal Protected Designation of Origin (PDO) extra virgin olive oil (EVOO). This is significant because of its ability to provide 8x-16x times more polyphenols (antioxidants) than the standard grade olive oil available in supermarkets
